The right combination of spices can turn a rather neutral ingredient like chicken into something so delicious that it’ll earn a top spot on your dinner menu rotation. They can add an instant pop of flavor to meat, fish and vegetables, no matter how you prepare them. Za’atar is a Levantine spice mix, made with dried herbs , toasted sesame seeds and ground sumac. The resulting savory mix gets some earthy flavor from the oregano, fattiness from the sesame seeds and floral acidity from the sumac.

In this recipe, boneless skinless chicken thighs are seasoned with za’atar and left to marinate for a few minutes. Then, the chicken takes a quick turn on the grill; the heat from the smoke activates the flavors of the za’atar even further. Since the za’atar adds so much flavor to the chicken, the rest of the recipe is incredibly simple and requires just a few basic ingredients. The only other thing you actually have to make is a quick yogurt sauce. Mix thick and creamy Greek yogurt and mayonnaise with granulated garlic, lemon juice and a bit of fresh dill.
