With fall comes apples — and lots of them — which inevitably leads to the question, “What do I do with all of these?” Enter: this hard cider-braised chicken, a dish that uses the fruit in two ways and might have you adding it to your weekly cozy season meal rotation.
The first use of apples is in the braise itself. Hard apple cider is combined with chicken stock, fresh thyme and grainy mustard for a flavorful broth that tenderizes bone-in chicken thighs. Hard cider is an alcoholic beverage made by fermenting apple juice; its alcohol by volume is similar to beer. For this recipe, use a dry cider , as a sweeter one could skew the balance of flavors.
Fresh apples are also used here. They’re peeled, thinly sliced and folded into the braise towards the end of cooking, then simmered until they’re just softened. Apples with firm flesh such as Gala, Granny Smith, Honeycrisp and Fuji work best since they hold their shape better than softer varieties. While bone-in chicken thighs are ideal in this braise , feel free to sub in a whole cut-up chicken or drumsticks. After the chicken has reached peak tenderness , remove the thighs from the pot so the potatoes and apples can continue to soften. The braising liquid will thicken, but it won’t coat the back of a spoon. Instead, it will be more like a loose pan sauce, and there will be plenty of it to give every bite a dunk.
Crisping the chicken skin at the end is optional, but it’s truly worth it for the texture alone. Serve this dish family-style on a large, shallow platter for a simple yet impressive weekend feast.Heat a large Dutch oven or pot over medium-high heat. Add oil and place the chicken in the pot, skin side down. Cook for about 4 minutes, until the skin is golden brown and releases easily from the pot. Flip and cook until browned, 3 to 4 minutes more . Transfer to a plate.
