A Bokken Jedi can be broadly defined as any Jedi Padawan trained in "the wild" after the fall of the Jedi Temple on Coruscant, essentially encompassing every new Jedi after Star Wars: Episode III - Revenge of the Sith.

She was trained after the fall of the order, was not Force-sensitive, and was trained by Ahsoka Tano, who walked away from the Jedi before Order 66. Sabine is a non-traditional Jedi in every way possible, and it's still unclear how much she will achieve in the ways of the Force.
7 Grogu Although Grogu was raised at the Jedi Temple on Coruscant, his long lifespan meant he wasn't fully trained as a Jedi. He also repressed most of his knowledge while hiding from the Empire until Luke helped unlock his memories and taught him to use the Force. Luke offered to accept Grogu as the first student of his new Jedi Temple, but he chose to return to Din Djarin instead. Grogu's childhood and time with Luke make him an intriguing mix of traditional and Bokken Jedi.
