Doesn't a sugar cube just conjure up images of a sweet grandmother pouring tea out of a pot with a little crocheted tea cozy on it? No one is doing anything newfangled and modern with a sugar cube. No, a sugar cube is reserved for tradition, for history, for classics! The rustic nature of the old-fashioned makes this one of the only drinks that many bartenders will simply build in the glass, skipping the usual step of stirring in a separate vessel.To make it with a sugar cube, skip the simple syrup and instead start with a single sugar cube in a glass. Muddle the cube in the glass with about a teaspoon of water, then add the rye and bitters, and stir.
