Add the diced onion and sauté for 4-5 minutes until softened.
2) Stir in the minced garlic and crushed red pepper flakes, cooking for another minute until fragrant.4) Pour in the vegetable broth and bring to a gentle simmer. Add the white beans and Italian seasoning. Cook for 10 minutes, allowing the flavors to meld. 5) Use an immersion blender to partially blend the soup, leaving some beans whole for texture. If you don’t have an immersion blender, transfer about 1/3 of the soup to a blender, blend until smooth, and return it to the pot.7) Season with salt and pepper to taste. If desired, sprinkle grated Parmesan cheese on top before serving.
