Distiller Jake Norris , a Denver resident and professional distiller, has launched The Curated Barrel Project , a venture that will release eight different bourbons over the next two years.
Norris, who has worked at Stranahan's and Laws Whiskey House, aims to inspire people to stop hoarding and start drinking. He believes that whiskey is meant to be enjoyed, not collected, and that the current state of American whiskey culture prioritizes collecting over consuming. Norris hopes to change this by releasing unique and flavorful bourbons that are made by barrel-aging one of his original bourbon recipes in a variety of casks.
The first release, called The Control, is a bourbon that features a mash bill of 75% corn, 21% rye, and 4% malted barley, aged for seven years in new American oak barrels. Future releases will see the whiskey aged in Cognac barrels, Port wine barrels, and other spirit casks.
Norris is also working to open a distillery in Arvada, which will specialize in making whiskey and will sell The Curated Barrel Project's products while spirits for the forthcoming distillery are aging. To celebrate each release, Norris will host chef-driven pop-up dinners, where guests will be asked to bring their own plates and flatware as conversation starters. Norris' goal is to make whiskey a part of everyday life, rather than a rare and expensive commodity
