Guests can savor the innovative chi kyuftah, a beef tartare-like delicacy, elevated with an Aleppo-pepper and Sichuan chili crisp. The restaurant also serves classic Armenian dishes, such as the yogurt kyuftah, a recipe that harks back to Grigoryan's great-grandparents' roots in Gaziantep, Turkey. The brisket undergoes a two-week brining process followed by a 12-hour smoking period, then is coated with the signature basturma spice blend. The pita itself is a multi-day process involving fermentation, careful portioning, and resting. The new restaurant space allows Grigoryan to experiment while perfecting his existing menu. Some dishes, such as the hempseed- and bulgur-stuffed grape leaves, are making a comeback from Yerord Mas's pop-up days.
