Hardly known in the U.S. a century ago, salsa in its many varieties is now one of our favorite ways to maximize flavor on the plate, writes KitchenBee.

ByIt is not exactly news that salsa is good to eat. In 1992, salsa outsold ketchup in the U.S. for the first time, thanks to a surge in the popularity of Mexican food. According to a report that year by market research firm Packaged Facts, sales of salsa reached $640 million, compared to $600 million for ketchup.

There was more to the story than met the eye. For one thing, ketchup is cheaper by volume than salsa, so despite the high value of salsa sales, Americans were still eating more ketchup than salsa: 569.2 million pints of ketchup in 1994, as against 353 million pints of all Mexican sauces, according to data from Information Resources.
