And one Hueytown wing spot had their fried chicken wings sitting on a shelf at a whopping 65 degrees lower than the standard. Among the infractions cited by county health inspectors were concerns like unwashed utensils, grime, food out of temperature or past due date, and yes, rat poop.In the cooler, black residue and dust were found on walls and the floors were dirty around the shelves.Raw chicken, raw goat head, raw goat legs and raw fish all prepped and portioned on site were stored in the display without a prep or a discard date.Fried tempura shrimp held on the countertop at 78 degrees when it should be 135 degrees or above.Raw chicken, Philly cheese meat, cut tomatoes, shredded cheese, cut lettuce, ham and turkey were out of temperature, which were later moved to the cooler or discarded.Food residues on the food holder, blade, blade ring and blade mount of the food slicer.Dish machine wash solution temperature measured maximum 92 degrees on multiple runs when it’s supposed to reach 120 degrees. Water temperature at the hand sink at the service counter measured a maximum of 85 degrees when it should be 100 degrees.Fried chicken wings sitting on shelf at 70 degrees when they should be at 135 degrees. Employee stated that the wings are fried, left on the counter and dropped back into the fryer. The wings were discarded.Observed rodent droppings, food debris and debris accumulation throughout the facility, including behind equipment, beneath the the coolers and freezers and around the ice machine.Hot dogs marked three months past due date.Personal medication was stored above the prep area, among food-related items for the facility. Exteriors of equipment throughout the facility were soiled with residue.
