A restaurant owner in central Pennsylvania is launching a new mobile food operation called King Quesadilla. The owner, Devor, says he came up with the idea to complement his existing restaurant, Joey’s Chicken Shack, and to capitalize on the popularity of quesadillas. The pop-up will operate out of his Subaru and offer quesadillas in three sizes with a variety of fillings and toppings.

Devor said he’s been toying around the idea for about six years and decided to hit the green light to boost business.

Devor is familiar with mobile food operations. Before he opened the restaurant, he owned The Chicken Truck. King Quesadilla will be available to book for corporate and other events and Devor said he plans to set up at local events such as beer festivals. “The concept was really something I can do simply and something that is approachable. You can put whatever you want in a quesadilla, similar to pizza,” Devor said.
