At last year's Mac N Cheese Throwdown eventgoers could taste up to 14 different presentations of mac n cheese. The 2025 event will feature 15 tastes. At the 9th annual tasting event, the public can sample four classic and 11 modern versions of the comfort food staple.
Then, they vote for their favorite. A panel of judges – including Cleveland.com’s Paris Wolfe – will also rate the makers.Cleveland.com asked three competition newbies how they plan to win. We wanted to know about noodles and cheese; they can keep the fancy stuff secret.All three of the new competitors use a blend of cheeses – though different varieties -- to add depth and complexity. And, they say, noodle shape matters. “Sharp cheddar is a classic you can’t miss,” said David Scott Stiving, Executive Chef at OddFellows in Chagrin Falls. “Fontina and gruyere add smooth creamy texture and nutty flavor.”in Cleveland Heights the competition is serious business. He has won several awards in national barbeque competitions. This is his first go at a mac-and-cheese competition. It’s a natural next step with its popularity as a barbeque side dish. “It’s always been a staple at most family events,” he said. “It’s a dish that evokes your childhood, but it can be a grownup dish as well.” “A great mac n cheese has to start with a great pasta, a vessel for the cheese sauce,” he said. “We like cavatappi. When it comes to cheese selection, I live by the rule of three cheeses. I look for melty, funky, sharp cheeses.” “The melty cheese is typically an American-style yellow cheese that gives that traditional mac look,” he explained. “The funky gives you that ‘Oh-what’s-in-there?’ flavor and can also accompany the protein you are adding. “The sharp, for me, is usually a sharp cheddar. That gives you that distinct cheese flavor that hits your pallet before the funky does,” he said. “I always start with a heavy cream base for the sauce as well.”which has six locations around Northeast Ohio, is entering to convince people that the Ohio-based chain has the best mac-and-cheese. After all, it is the restaurants’ best-selling side dish. “What makes ours best is the perfect combination of the gooey cheese with the sauce,” said John Yacobozzi, market leader for Cleveland and Akron. “We use cavatappi pasta to pick up and hold the cheesiness.” City Barbecue’s recipe includes a Monterey Jack, mild cheddar and parmesan cheese blend paired with a signature roux-based cheese sauce.
