When expecting frost, growers can help protect plants by watering them less.

FAIRBANKS, Alaska - All good things must come to an end, and outdoor gardening season in Fairbanks is reaching its close as winter weather approaches.

Some gardening vegetables, however, can continue to grow even after frost begins to set in at night. According to Glen Risse, Co-Owner of Risse Greenhouse, “If you want to try to get one more week or two more weeks out of your zucchini plants but they’re still threatening frost, one of the things you can do is put frost cloth over your zucchini plants. This will keep some of the warmth from the ground around the plant, and it’s good for about three to five degrees.

However, some plants like cabbages, cauliflower, broccoli and kale are hardier against frost. “Those are the cole crops. They can actually take a light frost. We have even harvested cabbage and broccoli and kale in snow,” claimed Risse.
