Cauliflower can be harvested with its leaves to protect the plant.
In the case of broccoli, Risse Greenhouse Co-Owner Glen Risse recommends cutting the first head that grows in a way that leaves side shoots open to sprouting more. “We’ll cut it up fairly high and get a small head right now, and then all of these branches that are coming off of these other leaves will produce side shoots, so we’ll end up with 10 to 15 side shoots on this plant later on,” he said.
For romanesco broccoli, Crystal Risse recommends harvesting when the flowers are open and less tightly compacted, with golden tips.
