Add the dry ingredients: Add the oat flour, almond flour, flaxseed meal, cinnamon, baking powder, baking soda, and salt. Mix with a wooden spoon until well combined and smooth. Add the mix-ins and toppings: Gently fold in ½ cup of the chocolate chips and ¹⁄³ cup of the walnuts . Divide the batter evenly between the prepared liners and sprinkle the remaining 2 tablespoons of chocolate chips and 2 tablespoons of walnuts evenly over the muffins.
Bake the muffins: Bake until a tester inserted into the middle comes out clean, 23 to 28 minutes. Let cool in the muffin tin for 5 minutes, sprinkle with sea salt, if desired, then remove and transfer to a wire rackto cool completely.: Keep muffins in an airtight container or reusable silicone bag at room temperature for 1 day, then store in the fridge for up to 4 days. I recommend warming them up in the microwave for 15 to 30 seconds before eating.
