Claire Saffitz’s new book, ‘What’s for Dessert,’ features decidedly simpler recipes—just don’t confuse simpler with easier. “I don’t do like, baking hacks,” she tells VF.

where her recipes are graded along an infamous matrix from five levels of difficulty to total time investment.

A conversation about dessert with Claire Saffitz inevitably becomes a conversation about family. The title ofafter all, is a cue as much to her regular sweet tooth pursuits with her husband as to her St. Louis upbringing, where the family meal was a treasured fact of life and dessert was a foregone conclusion. “It was just a normal part of our mealtime,” Saffitz recalls, as much a part of her childhood as walking from her house to St. Louis Bread Co.
