Denver's culinary scene is thriving, offering a diverse range of dining experiences for every palate. From upscale sushi creations to casual smashburgers and innovative dumpling spots, the city has something to tantalize every taste bud. One recent addition to the city's gastronomic landscape is NADC, a subterranean restaurant located in the basement below Tight End. NADC boasts a prix fixe menu that sets diners back $195 per person, inclusive of a 20% service charge.

Drinks pairings or à la carte beverages are additional. Seatings are available at 5, 7:15, and 9:30 p.m., but guests are advised to arrive 30 minutes prior to enjoy a welcome beverage and canapé service. My visit in early January was marked by a unique experience. The elevator was out of order, so we were escorted through the kitchen and down a set of stairs to a hidden lounge area concealed behind a black curtain. A warm hand towel, a mocktail (the restaurant was yet to secure its liquor license), and four small bites were promptly served upon arrival. Guests are then led to the sushi counter, where each person's name is inscribed on a slate at their designated seat. Drink options are explained in detail, and soon, the culinary artistry commences. The chefs meticulously describe each course as it is presented, creating a captivating spectacle. The pacing is expertly orchestrated — rapid enough to maintain an exhilarating atmosphere without feeling rushed — and every single bite was a triumph. (Though I confess, the texture of jellyfish remains a point of contention for me.) Our culinary journey began with yellowtail adorned with corn pudding, sourdough crumbs, housemade soy sauce, and fresh wasabi. This was followed by Hokkaido scallop and fire-kissed baby sea bream. Along the way, morsels of waygu, bone marrow, eel, and uni graced our palates. It was an exhilarating whirlwind of flavors, flawlessly executed by experienced professionals. For sushi enthusiasts seeking a truly unforgettable dining experience, NADC is an absolute must-visit.If, however, a more casual vibe is more your style, two new (ish) pizza havens should be on your radar. The PZA, formerly operating out of the kitchen attached to Tight End, relocated last year. Owner Jake Rothery describes his pizza style as an old-world, Neapolitan-like dough that's light, chewy, and infused with an East Coast twist. Among my favorites were the B.I.G. Island, featuring bacon, jalapeño, and pineapple jam instead of the typical pineapple chunks, and the Dillmatic, boasting pickle slices and housemade ranch. But honestly, you can't go wrong with any of their offerings. The salads, sandwiches on pizza dough bread, and wings are equally impressive.Mitchell Santee launched Mario's Speakeasy Pizza from the kitchen inside Pour House in 2023, serving up slices and whole pies late into the evening. After Pour House closed last October, Santee secured the lease. These East Coast-style pies transported me straight back to the pizzerias we frequented during family visits to Long Island when I was a child. It's evident that Santee pours a great deal of care into crafting each pizza. The fact that they're available until 2:30 a.m. Tuesday through Thursday and Sunday, and until 3 a.m. on Friday and Saturday, is an added bonus. And don't forget about Pour House's 99-cent beer promotion, valid through the end of February.Another standout spot in Denver's culinary scene is a new dumpling haven that has opened in the former space of Bittersweet near Wash Park. The owner is also the chef at another beloved dumpling establishment, Fortune Wok to Table, in Cherry Creek. The specialty here is Shanghainese-style dumplings, available steamed or fried in a variety of fillings: pork, beef, or vegetable (spinach and bok choy). Our group of seven quickly devoured several orders. The menu also features Shanghainese-style noodles and soups, as well as larger dishes perfect for sharing, such as pork belly in a garlic soy reduction, a crispy half-duck, and a unique preparation of sole that tasted like elevated fish stick bites—exceptionally good.My recent visit to Denver in January served as a wonderful reminder of what makes this city so special. The wine was flowing freely — and if you're lucky enough to have sommelier Clara Klein working, be sure to let her guide your wine selections. She has a truly captivating way of describing grapes that's both informative and entertaining
