Braunda Smith, owner of Lucy Cooper's Ice House, wanted to honor Express-News food writer Chuck Blount, who died Thursday. She decided on a memorial burger.
, who died Thursday at 47 after a short illness, is being honored with a specially created burger named after him at one of his favorite restaurants.Chef Braunda Smith, the owner of Lucy Cooper's, created the dish. She described it as an 8-ounce patty topped with pulled pork, two strips of Applewood smoked bacon drizzled in Alabama White barbecue sauce and topped by a smoked sausage link. There's more: two chicken fried onion rings and a drizzling of Coca Cola barbecue sauce.
Smith said she wanted to do something to honor Blount, who built up a loyal readership by sharing barbecue grilling techniques from"Chuck's Food Shack," a 200-square-foot cookout structure in his back yard, and writing about San Antonio's restaurants and bars. The chef has been friends with Blount and his wife for five years.
"I kind of had this epiphany as my husband and I were driving in the car, to speak to and for Chuck through our love of food," Smith said."Like, what better tribute? What better way to help this family?""It's a very 'Chuck Food Shack' kind of a burger idea," she said."There's so many times we just sat at the corner of the little bar top at Lucy Cooper's and just talked food. And he was always laughing and joking with me about ...
"He goes, 'But it always works. It always works,'" Smith recalled."He loved literally anything that I put on a plate."
