Jue Let, a new Pearl bar from Best Quality Daughter chef Jennifer Hwa Dobbertin, is inspired by culinary legend James Beard's mentor.
Best Quality Daughter chef and owner Jennifer Hwa Dobbertin is expanding at Pearl with a new bar concept inspired in part by her success as a James Beard semifinalist. Dobbertin announced Monday the launch of new cocktail bar Jue Let , which will open this year.
It will take over the former spot of Blue Box Bar at 312 Pearl Parkway. ALSO READ: Max & Louie's owner shares recipes for chicken soup, 'best matzo balls on Earth' After receiving her first James Beard nomination in 2023, Dobbertin learned that the culinary legend was heavily influenced by his family's private chef, a Chinese-born man named Jue Let. 'When I was researching James Beard, I was pleasantly surprised to learn that a Chinese immigrant had such a strong influence on his upbringing and the trajectory of his culinary career...I felt it was important to pay homage to that,' Dobbertin said in a release. ALSO READ: Go around the world with six dumplings at San Antonio restaurants The Chinese-American chef has long been sharing the intersection of Chinese, Taiwanese and American cuisine at Best Quality Daughter, which earned her spots as a James Beard semifinalist for Best Chef: Texas again in 2024 and 2025. Two key players at Best Quality Daughter will join Dobbertin at the new bar: Lis Forsythe as beverage director and Daniel Perez as director of operations. Forsythe is the brains behind Best Quality Daughter's bar program, and Perez serves as general manager at the restaurant. Dobbertin is again partnering with architecture firm Lake | Flato for the new bar's interior design. 'I have been dreaming up my next concept at Pearl for the last few years, and I am so excited to finally share it with the world,' Dobbertin said.
