Transfer corn to large plate.Transfer poblano to a large bowl, cover tightly with plastic wrap or a tightly fitting lid, and let sit until cooled, 5 to 10 minutes.Meanwhile, in a medium bowl, combine lime zest and juice, cilantro, serrano, garlic, salt, pepper, and remaining 1/4 cup oil; stir to combine.Transfer cooled poblano to a cutting board. Using a clean kitchen towel or paper towels, peel off charred skin. Halve poblano lengthwise and remove seeds and stem.
