Our restaurant critic’s favorite food in San Antonio is more complicated than you think.

It’s a mosaic, a greatest-hits album, a bunch of TV screens like that wall in “The Matrix.” I won’t say my absolute one best bite in San Antonio, because I don’t want that one bite to define who I am as a restaurant critic. By nature and by necessity, I’m an omnivore. And whether we like it or not, people judge us by what we eat. I will say that I have dozens of Top 10 lists that speak to my favorite restaurants and styles of food in San Antonio. TASTE Q&A: Where to take a vegetarian visitor? But that’s not what you asked, is it? So here goes: I got asked this same question at PechaKucha in August, a night when eight San Antonians got up and told stories about what they do. My answer that night was the No. 5 Mexican Dinner at Garcia’s Mexican Food, the perfect San Antonio plate of cheese enchiladas with rice and beans and served with homemade flour tortillas. That’s accurate, but incomplete. I’ve had lots of best bites. Here, there and everywhere. Fatty brisket at the late John Mueller’s barbecue truck and foie gras sushi at Uchi, both in Austin at my old job. I’ve had tacos al pastor at a Beverly Hills taco truck at 2 in the morning and paratha at a New Delhi taxi stand with a little paper cup of chai. I’ve had a kathi roll in Kathmandu and the Vietnamese trifecta of bun cha in Hanoi, bun bo Hue in Hue and a banh mi in Da Nang. Each and every one of them the bite of a lifetime. TASTE Q&A: Where can I get the city’s best fresh produce? In San Antonio, it’s enchiladas at Garcia’s. But it’s also eggs and truffles at Cullum’s Attaboy, a double cheeseburger at Mr. Juicy and fried chicken at The Jerk Shack. It’s sashimi at Shiro and a bean cup at Lala’s Gorditas and menudo at J&I Cafe. It’s the fussy cup of coffee I make myself every morning with beans from What’s Brewing. It’s an oddball little dessert called the Bambino Huey that Al DiLiberto made years ago at Boccone’s that he resurrected at a sports bar that’s out of business now. Throw in spaghetti and meatballs from Aldo’s, roll everything into one restaurant, and I’d write about nowhere else ever. But that’s a lot, I know. The true best bite is the bite made by somebody who loves you. That part’s trickier. I’ll see you in line at Garcia’s.
