Even saying 'anchovy butter' out loud feels fancy.
You don't have to cook the noodles. I have made similar with spaghetti sauce and have tried it cooked and raw. With that being said I have noticed cooking it brings a lot of water out of the zucchini and tends to water down the sauce. I like the suggestion from SFGUY with the paper towel underneath and into the oven. I have not tried this yet but seems like it might solve this problem.
Another tasty idea is to saute chopped Portabella mushrooms in garlic, 1 TBSP olive oil, 1 TBSP organic butter and red wine, then add your meat , a bit more butter and olive oil, then add the cooked zucchini noodles and simmer 2 mins. Yum !Yes, need to cook the zucchini noodles first in a cookie sheet lined with paper towels - either 20 mins in the oven at about 150 degrees ; or outside in the sun on a hot day for about 30-45 mins.
