When you think of soul food, you might think of Southern dishes such as cornbread, greens, ribs and baked mac and cheese. But in the Hulu docuseries Searching For Soul Food, theChefAlisa Reynolds sets out to expand that definition. Via blackjoyreckon:
, who is French-trained with a soul food foundation, sets out to expand the definition: “cuisine created with ingenuity through struggle that nourished people through [hard] times.” In, discovers what soul food looks like around the world. As she seeks out the cuisine, she explores the stories, people, and traditions of each place she visits, bringing her own flavor right along with her.
Reckon caught up with Chef Reynolds recently to discuss her travels, what soul food means to her, and how her voyages to Mississippi, Oklahoma, Appalachia, South Africa, Italy, Jamaica, Peru and back to her hometown, Los Angeles, expanded her idea of soul food.Chef Alisa Reynolds: After completing your travels, what has awakened it for you and your soul? And were you inspired to create new dishes or approach anything differently as a chef?What inspired me the most in my personal life is that struggle has existed [worldwide]. And beautiful dishes come out of these things. And progress is slow, but the food remains the same. And I think that I take that back. And in terms of recipes, so many that are in line, I have not got a chance to work on some, but I’m working.
And the other one, I would think, because they all stood out, so there was not one; every place had a special dish that stood out for me. But I would say the chakalaka in South Africa because it’s a dish that is like a salsa, or a relish, but it has so many different cultures. But it’s beloved by the entire country. So that was really cool.is also pretty educational, diving into the cultures that influence the dishes.
