Do I buy at the grocer because it’s more convenient and I have more time and options? If I do, where does the money go?Do I buy the cheapest or most expensive? Where do price and quality intersect?What will taste better? What size do I need to feed my guests and offer leftovers?It’s enough to give me a headache. So, I’m ignoring that voice and listening to local farm-to-table pioneer Parker Bosley.
Organic certification may be good, but it can be tricky. “Today, organic does not equal better food,” he says. “There are factory farms or industrial-type production facilities that are certified organic. Animals can still be in confinement operations that are organic.” “We then craft a unique brine based on sea salt, Ohio sorghum, organic sugar, and mulling spices,” he says. “The ham needs a ‘curing’ agent for safe cooking, so we use the nitrates naturally occurring in celery powder. Technically, it’s a synthetic-nitrate-free ham. We then smoke the hams for 16 hours to a tender finish.”
