A restaurant coalition is urging city and state officials to take immediate action against illegal taco vendors.
The Washington State Mexican Restaurant Fair Play Coalition, representing over 200 licensed Mexican restaurants, is urging city and state officials to take immediate action against illegal "pop-up" taco tents and stands operating across the state.
Coalition Chair Josiah Gaytán emphasized the threat these unlicensed vendors pose to public health and legitimate businesses."Our members are hardworking, tax-paying business owners who meet every inspection and permit requirement. These illegal operations not only undercut legitimate restaurants — they threaten public health and erode trust in local government," Gaytán said. The coalition has filed formal complaints, providing evidence of more than 50 unlicensed vendors operating without County Health permits or business licenses in cities such as Seattle, Burien, Kent, Auburn, Federal Way, Tacoma, and the Tri-Cities. Many of these vendors are reportedly linked to out-of-state operations and lack basic sanitation facilities, the coalition claims.The coalition, with legal counsel, is preparing to file a lawsuit for financial damages and to enforce regulations, while also launching a public awareness campaign on the health risks of unregulated food sales.
