ChimlanhMuch about Chimlanh is the same, like the location in the Cedars and most of the menu, but there are a few changes. Duong now runs the coffee shop with longtime employee-turned-partner Lesley Guevara, and they added tea service, something Duong always wanted to offer.“I am coming back so excited and refreshed,” she said. “The break was truly life-changing for me, not being in the restaurant grind every single day. I feel so refreshed and so excited for this new chapter.
Chimlanh is also now a 6-days-a-week operation. That could change if it ends up feeling like too much, said Duong, who is quick to guard the well being of herself and her staff. The shop serves the same slow-drip cà phê it was known for before with the addition of some new specialty drinks such as the Hà Nôi Latte, which is made with pandan and oat milk. A line up of locally made pastries is also on offer, with sweets like oatmeal cream pies from Haute Sweets Patisserie and the new addition of a handful of bagels and schmears fromDuong also partnered with Starship Bagel owner, Oren Salomon, to create a one-time treat for Chimlanh’s reopening day.
