Alief's Viet Tran started a Stafford bánh mì shop to honor mother's cooking
in the nation and would be the subject of numerous blogs and articles.
Tran said that in addition to being a portmanteau of “Vietnamese sandwich,” the restaurant's trademarked name combines his first name and “sandwich.” “I always wanted to pass down my mom’s recipes and express her cooking,” Tran said."I didn’t know how great my mother’s cooking was until I got to college and went out to different areas and thought, ‘Man, the food’s just not that great.’”
Tran said the experience proved a turning point, prompting him to identify his true aspiration of opening a Vietnamese banh mi shop.
