Valery Jean-Bart is saying goodbye to Val's Cheesecakes, the Dallas sweets shop he started more than a decade ago.
After 12 years, Valery Jean-Bart is letting go. Letting go, just a little, of his late mother, and letting go of the Dallas cheesecake business he built in her honor.Jean-Bart first started selling cheesecakes in Dallas in 2012 after his mother, who gave him her Haitian roots and love of cheesecake, died of cancer. The two of them had baked their way through her treatments, and experimented and tinkered with cheesecake flavors to amass a collection of 270 recipes.
Jean-Bart said he’s in the process of securing a trademark license, which would allow him to hand Val’s Cheesecakes over to a new owner. If that doesn’t pan out, he’ll close down the Greenville Avenue cheesecake shop in the coming months and turn the space over to someone else. Cheesecakes will still be very much a part of Jean-Bart’s future, he said. He will start a new venture he’s calling Val’s Blue Label — a small-scale, gourmet cheesecake business that he’ll run out ofUnlike at Val’s Cheesecakes, retail will be a minor part of Val’s Blue Label, Jean-Bart said. It will only be open for walk-in retail one day a week. The rest of the business will come from custom cakes, pre-orders and classes.
Scaling back will give Jean-Bart the capacity to focus on himself a bit more, he said. And although he’s relieved by that, walking away from the business he built to keep his mother’s memory close is difficult. “There’s a lot of grief in that, in letting her go,” he said. “But I think if she was here, she’d be the first one to say, ‘You need to pour more into yourself. You need to go live your life.’”Val’s Cheesecakes is located at 2820 Greenville Ave., Dallas and 1112 South Akard St. Dallas. Val’s Blue Label will take over the Akard Street location in the coming months., Staff Reporter.
