This gluten-free, nearly transparent beer is crafted entirely from fonio, an ancient grain indigenous to West Africa. Fonio's entry into the world of brewing is a relatively recent phenomenon, debuting in 2024.

He also emphasizes fonio's edibility, stating that it can be both cooked and consumed.Patrick Borque, production manager at Kiitos, recounts how he was inspired to create a 100% fonio beer after learning about Brooklyn Brewery's inclusion of fonio in their brews. Kiitos possesses a specialized piece of equipment, a mash press filter, which allows them to brew with unconventional ingredients like fonio, millet, and buckwheat - ingredients that most breweries find challenging to handle. Borque explains that this device utilizes high pressure to separate the sweet wort (which transforms into beer) from the grain and water mixture (mash) during the brewing process, diverging significantly from the traditional method of relying on gravity for separation.Brewing with fonio proved to be a complex endeavor, as Borque reveals that it nearly led to clogged pipework. However, Kiitos persevered, and is now offering this experimental batch to the public in both cans and on draft.
