REAL DEL MONTE, México — Isabel Arriaga Lozano rellena cuidadosamente una empanada de hojaldre con una mezcla de carne, papas y chiles. Está elaborando un paste, un atesorado bocadillo mexicano que tiene una rica historia. Originario del pueblo minero de Real del Monte en el estado de Hidalgo, en el centro de México, el paste fue traído por mineros británicos en la década de 1820 y desde entonces se ha convertido en una tradición culinaria local.
El lado doblado funcionaba entonces como una especie de mango que los mineros podían sujetar para no ensuciar el pastel con la tierra y el lodo que habían acumulado al trabajar en la mina. Arriaga dijo que ha estado haciendo pastes por 30 años. La familia de su esposo se dedicaba a hacer pastes y ella asumió el control del negocio cuando él falleció.
