Americans love shrimp, but what about shrimp-free shrimp?

New Wave Foods is taking advantage of this gap in the plant based sector.

To establish a gold standard, the team examined “seven or more shrimp from around the world, we varied that shrimp and we took an amalgam of the very best of those and said this is what it needs to be, in snap in texture in mouth feel, in flavor” said McGovern.
