ChefFLThis is a fabulous turkey meatloaf! I added a pablano pepper to the sauce to give a little kick.Outstanding meatloaf! I have a go-to "fancy" turkey meatloaf recipe my husband and I love, but wanted to try something new.
Be warned, this recipe requires a lot of prep work and a lot of cleanup. When I finally got to the step of making the loaf in the pan, I said out loud , "I don't care how good this meatloaf tastes, I am NEVER making it again!" HOWEVER, my husband and I were blown away by how good it is! So, I will be making this again, when I'm feeling ambitious. Perfect for a day we are snowed in :)My family loves this recipe! When my husband and I started dating he wasn't sure about the veggies, and now he requests this meatloaf all the time. I like to mix it up and use whatever veggies I have handy too. Sometimes zucchini instead of mushrooms, or whatever I have handy. Leftovers keep great for lunches all week too!I have been making this for twelve years and I will never use another recipe. I follow the recipe exactly and I always think I'll have leftovers, but my husband and son smash this! Using the Vitamix to chop the veggies cuts prep time down to minutes!I would give this a 3.5 if possible only because it was a little labor intensive for meatloaf. Delicious flavors, and very juicy.Made this last night. It came out mushy in the middle. The only thing I left out was the garlic.
