California, along with states like Arizona, Massachusetts, and Michigan, mandates that all eggs sold within the state originate from cage-free hens, which are generally more expensive. The sharp rise in egg prices coincides with high demand and a severe outbreak of avian flu, known as highly pathogenic avian influenza. The U.S. Department of Agriculture attributes this outbreak to the deaths of over 20 million egg-laying hens in the last quarter of 2024.
