Merchantville Chef Phil Manganaro, featured in "Found: King of Matsutake Ridge," sniffs a matsutake mushroom he found in the Pine Barrens.wades through wild brush three miles deep in the Pine Barrens, heading to one of his favorite secret locations for fresh ingredients.

Manganaro’s unique approach to food is being brought to the big screen by Pennsylvania-based husband and wife filmmaking duo Steve and Anastasia Forde, who own Forde Films. The couple first dined at Manganaro’s restaurant on a whim in March 2019 and found the experience revelatory. To produce the documentary, filmmakers followed Manganaro to his “wild farms,” as he calls them, for a over a year, including his secret matsutake mushroom site. Matsutake, which translates to pine mushroom in Japanese, is a relatively rare mushroom that only grows near pine trees.

The film includes shots of Manganaro trudging through streams, climbing hills, and walking through thick brush during all four of New Jersey’s seasons in search of ingredients one can’t find at the average grocery store. Manganaro said he’s always trying to capture new flavors for his diners, including the indescribable taste of the ocean.
