1/2 ripe mango, peeled, pitted and diced1/8 teaspoon freshly ground black pepper2 Persian cucumbers, sliced1 serrano or jalapeño pepper, stemmed, seeded and thinly sliced, to taste Position a rack in the middle of the oven and preheat to 400 degrees. Line a large, rimmed baking sheet with parchment paper or foil.In a small bowl whisk together the chili powder, sugar , cumin, coriander, salt and cayenne pepper. Place the salmon, skin side down, on the prepared baking sheet.
