Yes, Japan is home to this delicious rice and seaweed morsel, but you might be surprised to find it’s not a dish that’s on everyone’s lips.
There’s a surprise in store for first-time visitors to Japan: Japanese people don’t eat that much sushi. This is a popular food, of course, though it has nowhere near the ubiquity you might expect given the number of sushi trains and carousels and conveyor belts that populate our shopping malls and main streets at home.
In Japan, sushi is just one of many cherished, traditional styles of eating, a meal that slots in next to tempura, katsu, ramen, soba, okonomiyaki and more. For those who are somehow uninitiated, sushi is a dish of rice seasoned with vinegar, sugar and salt, paired with meat or vegetables.
And then finally, along came nigirizushi, the sushi we know today. The story is that in 1824, chef Hanaya Yohei invented a technique of pairing seasoned sushi rice with raw fish and other seafood. Yohei’s style of sushi was also called Edomae zushi, as the seafood originated from the Bay of Tokyo – that name is still used to denote high-quality, traditional sushi.Where do we start?
