Mike Rypka isn’t a formal guy. He started his company, Torchy’s Tacos, in 2006 from a single food truck. The restaurants, now in 75 locations in five states, have a colorful, slightly gritty aura. Mr. Rypka is rarely seen dressed in anything other than shorts and sneakers.

That is why his purchase of an extremely formal, over-the-top house with a black, gold and white color scheme in the Mount Bonnell neighborhood of Austin, Texas, for $4.9 million in 2017 presented a challenge.
