The Sonoran dog starts out as American as you can imagine: With the patriotic combo of a regular ol' hot dog, candy-striped in bacon. As they cook on the grill, the fat of the bacon renders out, basting the dog with smoky flavor as it crisps. Youre gonna need that full-force crisp meatiness to stand up to the onslaught of Sonoran-style toppings.
Think of it as a delicious clash of cultures. The warm grilled hot dog contrasts with the cool of avocado. The smokiness of hot, crispy bacon clashes with cool, refreshing pico de gallo. The blandness of pinto beans confronts the heat of pickled jalapeño. Crunchy potato chips go up against the squishiness of the bun. Potato chips? Yes, potato chips.
And don't forget the bun. An ordinary hot dog bun simply wasn't designed to hold this much drama. Go for fancy hot dog rolls from bakeries, which tend to be heftier, or even a torpedo-shaped French roll.
But you don't need to memorize the Sonoran hot dog's biography to appreciate its strange power. One bite, and you'll understand.
