Hot take: the best cheese boards only need one cheese:
It's an hour into the elegant cocktail party you're hosting, and that cheese board you arranged so carefully is starting to look a bit...sad. You arranged it to be super abundant and gorgeous, with six kinds of cheese surrounded by all sorts of nuts and crackers and dried fruits and fresh fruit. It looked so good you even 'gramed it. But I've just arrived , and your cheese board looks nothing like the one I hearted while I was trying to decide which dress to wear.
All those pretty crackers and nuts and fruits have tumbled all over the coffee table as your guests tried to get around them to dig into the cheese. Those little cheese knives are coated in at least three different kinds of cheese, and I'm scared that this Comté will taste like a combo of brie and gorgonzola. And the cheeses themselves? Because you set out thin slices of 5 or 6 varieties, they've gone from beautiful to whittled to their nubs in no time.
I love you and your enthusiasm for your over-stuffed cheese board, but there's another way of serving cheese.
