The grilled meats are luscious, but don’t skip the sides, salsas, beverages, and sweets—I especially love the cactus salad and grilled plantains with pineapple. Cinnamon lends a surprising warmth to the salsa roja ranchera, while the salsa frita verde relies on a secret ingredient—chicken bouillon powder—for an umami boost.
