YouTube food-culinary influencer ArnieTex, based in McAllen in the Rio Grande Valley of South Texas, has built a following with simple home cooking videos.

Arnie Segovia always knew there was great power in good barbecue. The 62-year-old, McAllen-based pitmaster is the son of a farmer and grandson of a chef. He grew up watching his mother and grandmother cook at home. He didn't need to be one of the Rio Grande Valley 's best-known culinary influencers to appreciate how food brings us together. But the overwhelming response to one video on his popular YouTube channel came as a shock.

He had to shutter his restaurant after just one year. He kept on cooking, though. He dived into barbecue cook-offs in the 2010s, and his team dominated the competition. That led to teaching barbecue classes in 2019, under his Pitmaster Class brand, he said. Segovia shot videos for his online barbecue classes, but it wasn't until the pandemic hit in 2020 that he started to up his game.
