The secret to this recipe is the raspberry jam. It provides a tart balance to sweet strawberries, plus some structure to help hold together the juicy fruit filling. The jam also provides a bright pop of color to enhance the otherwise muted color of cooked strawberries.
Don't overfill the crust with strawberries! The filling can overflow while cooking. Always cook this strawberry pie on a parchment-lined baking sheet. If anything does leak out, or if the butter from the crust drips down, the baking sheet will catch it. Don't over-process the dough in the food processor or you'll have a tough crust. Vodka and baking powder help create an extra flaky crust. Chilling the crust for at least 1 hour allows the gluten in the crust to rest and the butter to firm up. Don't skip this step! The streusel can be made in advance. Store in an air-tight container in the refrigerator for 2 days. The strawberries can be prepped in advance. Quartered strawberries can be stored in a bowl, covered with plastic wrap, in the refrigerator for up to 24 hours. The crust can be fitted into the pie crust in advance. Double wrap in plastic and freeze for up to 1 month. Do not thaw before using.Gluten-free flour can be subbed for all-purpose flour in the streusel. Minute tapioca can be used in place of cornstarch.
