And even though the minimum for mezcal certification is only 40% ABV, there is no mezcal bottle at Madre that has an ABV under 44%. “Most mezcaleros and palenques [distilleries],” Vasquez says, “aim for 44% ABV and above. But the minimum has gone down to 40% because it’s convenient for mass production.
