Slow-cooking squash in lots of olive oil is a very, very smart idea.
This was delicious. We took the squash from the fall decoration on the table, not realizing at first that it wasn't a pumpkin.
Leaving the skin on made it a cinch to prepare and was a very nice texture next to the soft interior. We did half the recipe to go with a grilled chicken breast and will use the other half to go with a couple of lamb chops later this week. It was so simple and tasty we'll just do this technique again. And again.
