'Shark Tank' contestant and San Antonio-based restaurateur Lucas Bradbury is spearheading another eatery in the Alamo City. Here's what to know about EVO.
“ Shark Tank ” contestant and San Antonio -based restaurateur Lucas Bradbury is moving on from “ Project Pollo ” to spearhead another eatery in the Alamo City — EVO , a fast-casual restaurant with a focus on balancing health, speed and affordability. As of Thursday, the eatery on 2501 Nacogdoches Rd. is operating in its soft opening phase, with a grand opening event planned for March.
According to EVO’s Instagram, the eatery prides itself on preparing food without high fructose corn syrup, artificial dyes, seed oils or even fryers. It’s “all made from scratch, in house and fresh daily 😃.” ALSO READ: Freebies, deals at Super Bowl watch parties in San Antonio Unlike Project Pollo, which was a vegan-based restaurant, EVO will be prepping proteins like crispy harissa chicken, Korean BBQ ribeye steak, grass-fed beef sausage and more.
