I added a few veg that I had on hand, like shredded carrots and peapods blanched at the very end of cooking the noodles. Be sure to really rinse the noodles as directed because otherwise they'll stick together.Like the other reviewer, I used less oil than called for but otherwise did the recipe as written. The highlight was the crunchy scallions - great contrast of texture and flavor against the smooth sauce and noodles. Next time I will use much less vinegar, maybe half, and even more scallions. Very good.I rate this recipe w/ fours forks for a combo of deliciousness and ease. I only used 1tsp of crushed pepper flakes figuring I could add more later. I did not add anymore.
