However, the fish were still alive and swimming in the tanks of LocalCoho, a salmon farm in Auburn, New York, scheduled to close at the end of January.
This presented a unique logistical challenge: the organizations needed to swiftly transfer the 13,000 salmon from their watery home to a processor capable of transforming them into frozen fillets for distribution. The Food Bank of Central New York, collaborating with LocalCoho staff and a dedicated team of volunteers, rose to the occasion. Dozens of volunteers donned waterproof gear and waded through knee-deep water to net the fish and transfer them into cold storage containers. A local business, Brown Carbonic, generously offered free refrigerated truck transportation to a processing facility in Rochester, an hour away. LocalCoho, determined to avoid food waste, worked tirelessly alongside the food bank team to meet the tight deadline. This collaborative effort resulted in the successful processing and quick-freezing of the donated salmon. Soon, over 26,000 servings of this valuable protein source will be distributed among 243 food pantries, soup kitchens, shelters, and other institutions within the food bank's network.
