Roasted Strawberry Layer Cake

This summery stunner comes to us from bakedbybenji's book The New Way to Cake.

For the Buttercream:For Assembly and Decorating:Preparation

To make the cake, sift together the flour and baking powder in a large bowl, and set aside. Mix the milk and elderflower cordial in a small bowl and set aside. Using a stand mixer or electric whisk, beat the butter, sugar and lemon zest for 5 minutes, or until pale and fluffy. Add the eggs one at a time, beating well after each addition. If the mixture looks like it’s starting to curdle, add 1 tablespoon of the flour mixture.

To make the buttercream, add the egg whites and sugar to the bowl of a stand mixer or a heatproof bowl. Make sure there are no traces of grease in the bowl as this will stop the meringue from whipping up. Place the bowl over a saucepan of simmering water, making sure that the base doesn’t touch the water. Whisk the eggs and sugar constantly until the mixture reaches a temperature of about 150°F . If you don’t have a thermometer, rub a little of the mixture in between your fingers.
