This is very good. I made it with what I had in the house: a sweet potato, carrots, white onion, curry powder, ground ginger powder, garlic powder and frozen Miso glazed cod from Costco. I put the butter and spices in a glass measuring cup and microwaved it. My husband loved it and kept commenting how good it was. It's a keeper! I won't change a thing.Don't you hate when people do this? Well, I didn't have fennel, so used a red pepper.
I know, it's not the EXACT recipe - but I still felt the sauce that everyone loved was just basic, perhaps this is a good start to a recipe. Everything cooked fine. I may try a variation of this another time.I love a butter sauce and with this one, you can't go wrong. I used Baso and Trout as my fish and because I had more fish than the recipe called for I added more garlic, ginger, butter and curry. The fennel plays nicely with all the flavours going on. Soooo good.
