This cake is certified Genius.

Erin B.Sure you could, but the extra weight of the meringue buttercream vs. the lighter weight of the whipped cream might compact the center of the cake down more than you want and make the whole cake feel heavier. Part of the beauty of this cake is its ethereal lightness. But I'm sure the flavor would be fine. Give it a go and report back!Thank you Erin, went with the whipped cream option, and by far the most easiest and best desserts to make.

It could not have been better! A keeper! Thank you!I have a small question - can I leave out any of the sugar? Im making this for my mom, who keeps a very low sugar diet, but is not strictly keto or sugar free. I just want to use the least amount that will keep the cake delectable and have the cake function as intended. There are so few ingredients that by volume the sugar makes up a large portion of the batter.

Food52 x Epicurean Precision Cutting BoardFood52 x Epicurean Precision Cutting BoardTo celebrate our 10th anniversary, we’re rolling out new, limited-edition products in the coming months. Better than a party favor? You bet. Put away your calculators, your rulers, and especially your 8th-grade math textbook. Then allow this exclusive-to-us board to be your trusty meal-prep guide. It's equipped with inch marks along the side, a conversion chart that'll answer all your measuring questions, and even a circle in the middle (but we'll get to that later). Now, grab your veggies and your favorite knife, because you're about to make cubes, matchsticks, and half-circles so spot-on your friends might ask if you attended cooking school when they weren't looking. Then, use the pastry guide to roll out some perfectly-uniform pie dough for dessert (that's where the circle comes in handy). It'll even flip to do double duty as a serving board, too. All done? Let the dishwasher handle the rest, serve yourself a slice, and then give yourself a pat on the back.

Food52 Raw Edge Dinnerware, by Jono PandolfiFood52 Raw Edge Dinnerware, by Jono PandolfiTo celebrate our 10th anniversary, we’re rolling out new, limited-edition products in the coming months. Better than a party favor? You bet. Jono Pandolfi’s designs have graced tables at some of New York’s finest restaurants—Eleven Madison Park, The Nomad, and The Plaza Hotel, to name a few—so when we wanted a dinnerware collection that was really worth celebrating, we knew just who to talk to. These gorgeous plates and bowls get their organic vibes from how they’re made: After they’re hand-shaped from clay, wax is painted onto the rim, and a glaze is hand-poured into the middle. The wax burns off when they’re kiln-fired, leaving behind that natural, unglazed texture you see on the outside. While each piece is truly a work of art, these are designed for everyday use, too. (Oh, and bonus: You can pair it all with the matching serveware.)
