Though both shops may be new, the names behind them are not. Greg Wade of Publican Quality Bread and Mindy Segal of Mindy’s Bakery have been proving their baking prowess for years, and they have the James Beard Awards to prove it . Now they each have a shiny new location to delve deeper into their craft.Walk into Publican Quality Bread and you’ll find that most of the space is dedicated to baking bread. Dozens of people scramble around the space, while a titanic-sized oven rests in the middle.
Fillings change roughly every other week, but both sandwiches I tried, one with smoked turkey and another with roast beef, were intricately constructed and bulked out with roasted vegetables and flavorful spreads. The bread itself manages to stay crisp, light and airy.
